Freezer Cooking 101

This is actually my second attempt at doing some freezer meals.  We are  going to pretend the first one didn't happen though because after about 5 hours in the kitchen and nothing much to show for it *except for a huge mess and some chopped veggies and some twice baked potatoes* I was d.o.n.e!

This go-round was much MUCH better and I actually had a GREAT time doing it! Many thanks to my sweet friend, Lori, who shared some great resources with me (see below).
Total, I spent about two hours cooking (maybe a little more because I was also trying to keep up with RG some of the time).  In those two hours I ended up with 2 dozen mini corn dog muffins, 6 meals and only one mess!! :) I was quite proud of myself!

Here, I am going to give you a little step-by-step on how to make your life easier by Freezer Cooking:

(1)Make a list of recipes (I used crock pot ones so I could just throw the whole meal and cook it without turning on the oven- trying to keep the house as cool as I can in this summer heat!)
(2)Make a grocery list of all the ingredients you don't have and go shopping (don't forget freezer bags!)
(3)get all your ingredients together for the meals you will be cooking
(4)chop all of your veggies and mince your garlic
(5)label all of your bag's with directions
(6)add meats (if it calls for chicken breast's I use two or three tenders instead of one breast)
(7)add veggies
(8)add other ingredients
(9)let air out, seal the bag and lay it flat (I lay bags in cookie sheet then when they are frozen stand them up vertically to save room)
(10)FREEZE :)

Here are the meals that I made:
-Teriyaki Chicken
-Savory Chicken
-Cilantro/Lime Chicken with black beans and corn
-Mini Corn Dog Muffins (toddler friendly)

I wish that I could take credit for all of these awesome tips, but really, I didn't come up with all of it.  I am just as "new" to this as some of you...
These steps and recipes I used are from the blog: Ring around the Rosies.  Check out her post on Freezer Cooking {here}.  She has tons of great recipes (and tons of toddler friendly meals that I am sure we will be using soon) that are all in a easy format to read and print too (you can download them in pdf too!).

Each recipe I used made enough to split into TWO freezer bags and easily fed our family (of two adults and a toddler) dinner and at least one lunch.  Like Jaima (the autor of Ring around the Rosies) said, I loved cooking this way because I made more than a weeks worth of food in a couple of hourse, plus you can choose all healthy natural ingredients to put into your meals.

Now, for the recipes I used:

Teriyaki Chicken:

Medium to Large bag of carrots
Red Onion cut into large chunks
4 Garlic cloves (minced)
4 Chicken breasts or 8-10 tenders
1 cup of Teriyaki sauce

Split between two bags, seal, mix, lay flat, freeze

Directions for bags:
add additional 1/4 cup of Teriyaki sauce to crock pot. cook low 6-7 hours. serve over hot rice

Savory Chicken:

4-6 chicken breasts (8-12 tenders)
2 cans stewed tomatoes
4 tablespoons of white wine (or extra broth)
1 large onion
4 garlic cloves minced
1 cup of chicken broth (see how I made mine below or choose a bpa/msg free one)
Salt and Pepper to taste
2 bay leafs
4 cups of broccoli (add while cooking)

split between two bags, seal, mix, lay flat, freeze

Directions for bags:
cook on low 6-7 hrs. add broccoli during last 3o minutes. remove bay leaves before serving

Cilantro/Lime Chicken (with black beans and corn)

6 chicken breasts
3 Tbs olive oil
2 limes, juiced
2 cups cilantro
1 large bag of frozen corn (or two smaller bags)
4 minced garlic cloves
1 finely chopped red onion
2 cans of black beans, rinsed
2 tsp cumin or chipotle powder
salt/pepper to taste

split between two bags, seal, mix, lay flat, freeze

Directions for bags:
cook on low 8 hours or high 4 hours, serve with hot tortillas or tostitos. Dress with sour cream, guacamole, and/or cheese

Mini Corn Dog Muffins

3 cups AP flour (I used Gluten Free)
1/2 cup sugar
1 Tablespoon salt
2 cups of milk
1/2 cup of melted butter
1 1/2 tsp pure vanilla extract
8 hot dogs (I purchased all natural, you could use chicken ones too)
2 cups corn meal
2 Tbs baking powder
1/2 tsp cinnamon
4 eggs
1 1/2 cup shredded cheddar cheese

split between two bags, seal, mix, lay flat, freze

Directions:
Cut hot dogs to toddler size pieces (I decided to just cut hot dogs into thirds and put one part in each muffin- it turned out waaay too much bread and not enough meat- next time I'll follow directions ha)! In a LARGE bowl, mix dry ingredients together and slowly add wet in order listed. Fold in diced hot dogs. Line 2 muffin tin's with wrappers. Scoop mixture into wrappers. Bake at 400 for about 15 minutes. (Mine made exactly 24 muffins)
Once cooled can be frozen for up to two weeks. Remove, thaw, re-heat.

Shreeded Chicken and Chicken Stock
(I choose to cook this on the stove top while I am preparing all of the other meals)
4 large chicken breasts
2 large onions- sliced
3-4 large carrots
4-5 stalks of celery
1 bay leaf
salt and pepper (or other seasonings) as desired

Directions:
Put all ingredients into a pot of boiling water and cook until chicken is cooked throughout (30ish minutes). Remove all veggies and bay leaf and discard. Remove chicken and let cool completely. Using a fork shred the chicken and put in freezer bags.
Directions to write on freezer bag: add to sandwiches, chicken salad, quesadillas, tacos, salads, etc!
Pour your broth into ice cube trays and freeze (I didn't do this the first go-round and I realllly wish I had- my stock takes up so much space in large containers!) Once the cubes are frozen, remove and place in freezer bags. Use as needed in soups, casseroles, stews and other recipes!

and an after picture of my freezer :)
Do you freezer cook? If so what are your favorite recipes?

no offense here if you have this on your blog- I used to- but then people told me how annoying it was (and I realized it for myself)... so I took it off- I figured if I had problems with "robots" then I would add it back and (knock on wood) I have not had a single issue.
These things literally just make leaving a comment take so much more time...

Bowtie Ballet!

Shout out to all of my Baylor loves out there... and an even bigger shout out to those Penland dining hall buddies... :)
Do any of you remember the bowtie pasta that was served on VERY SPECIAL occasions? I loooved this stuff and remember stuffing to-go boxes full and sneaking it out for an extra meal.  Well, I decided to try and recreate this dish at home and (to my surprise!) it tasted sooo much like the one from my BU days! It was very easy to make and made enough for leftovers (I usually hate leftovers but was Oh-so-excited about this one!) Those of you who have not heard of this you must try it!  My hubby hates peas and even he loved this dish! (You can throw in some extra chicken if your heart desires, his did haha)

Here's what you need:
1 box of Farfalle Pasta (bowtie pasta- I think mine was 12 oz's?)
Bacon (I used ~5 strips)
1 package of frozen peas
1 or 2 jars of Alfredo sauce (to the consistency you want- I used one and a half)
Salt and Pepper (to taste)

Optional Ingredients:
onions (I omitted- I hate onions ha)
small block of provolone cheese
red pepper flakes
(chicken- hubby requested; I cooked a breast and shredded and added to his pasta)

Hint: I used a large skillet so I didn't have to transfer ingredients a lot of times...

Here's how you do it:
Fry the bacon and then remove from the skillet.
Do NOT get rid of your grease (I left it on low heat from this point on)
While you are cooking the bacon follow the ingredients on the back of the package of peas to cook them (I microwaved them and that worked great)
Drain peas then add peas to the pan with the grease
Stir in desired amount of Alfredo sauce
{If you want to add a little spice now is a good time to add red pepper flakes and/or onions- if using onions I would first sauté- just my opinion)
Keep on low heat...

Cook Pasta according to box
Drain Pasta and add to pea mixture
break apart bacon* into tiny pieces and mix in with peas, pasta and sauce.
Cut provolone into small pieces and add to top of pasta after putting it bowl or plate to be served

*I saved a couple pieces of bacon to use as "topping" once I served our meals (mainly for looks- and hubs and I love bacon so why not!? ha) .

MMM MMM GOOD!! I hope you all enjoy this as much as I have!

(feel free to let me know if you have any questions and I will be happy to try and help!)

woah woah woah!! + Maternity pics!! :)

where have I been!?  Well let me see if I can explain...
Lets see...

Last Wednesday was family night at the camp where K has been working so my stepmom, grandaddy, aunt and I drove up for the night.  We enjoyed seeing the OA ceremony and also enjoyed some dinner together at our favorite local spot.  We also went and got sno-cones after dinner (I have been craving these like no other... sno cream flavor mmm!!) We took some pics but unfortunately all the pics from that night are on my aunts camera... lets see if I can eventually get those from her :)
sorry about the reflection but this is where the camp is... beautiful country!

After the ceremony my family went home and I got to stay at camp for a few nights! K had worked it out with the director of the camp that I could stay with a few nights and he even let us stay at HIS little house at the camp which was sooo generous! I had such a great time sleeping in and getting to see K every once-in-awhile when he had a break... he would poke his head in to say hi and we would grab dinner or lunch together. It was great.  I can not explain how much I enjoyed getting to be "with" him for once this summer! amazzzing I tell you, I have missed that man so much!!
Thursday night we went up to Winston-Salem to eat dinner and he took me to the Mellow Mushroom in downtown... we got a pizza and it was soo yummy! Here are some funny pictures - sorry for the iphone crappy quality...

I just love that there is a note to both Humans AND DOGS! haha I was laughing my "tail" off hahaha

because he just enjoys making goofy faces :-P

the sunset on the drive home... blurrry but you get the idea

So Friday night after K had finished work we had dinner and then went to meet a long lost friend... let me give you the background on this friend!
...over a year ago, when K and I were planning our wedding, we began looking for someone to do a "trash-the-dress" photo shoot for us.  We came across this AMAZING photographer named Patsy Brown (yup that would be K&I on the far right image on her homepage ;) ).  As soon as we found her site we knew that we had to have her! We planned our honeymoon in her neck of the woods so that we could get her to take some pictures of us.  The pictures that we have from her are literally the BEST pictures I have ever seen and we love them more than our wedding photos!  Anyways, through the past year or so we have always told Patsy that when its time for babies she better be ready! Well, as soon as we found out we were expecting guess who came to mind! Patsy!  Sadly, after the move we were completely strapped for $ and just didn't think we could afford it all... after all she does live 1/2 way across the country and all!  Well early last week (maybe sunday night?) I get a message on facebook from none-other than Mrs. Patsy herself! She was just saying "HI" and wondering where we were these days... well I wrote her back explaining that we had moved and that K was up in the mountains working and would be there for a couple more weeks.  Immediately we began messaging back and forth and to save you some of your precious time let me just tell you that she and her family were planning a vacation for THAT week... in the same itty-bitty-town where K has been working all summer (her in-laws live there)!!! She asked if she could take some pics of us and well... I dont even have to tell you what I said except for the fact I about fell out of my chair with excitement.... What in the world are the chances yall? God is so good!!
so Friday night after dinner K & I met our long-lost-friend, Patsy, at a beautiful park in this small town and she took some AMAZING maternity pictures of us!! I will post some of them below.  If you just love them, please leave her a comment telling her on her blog
Friday night, after the pics K & I drove back home and called it a night, we got to spend the weekend working on unpacking some and Saturday he even made me breakfast in bed to keep me out of his hair while he was unpacking ;) hehe

Saturday for lunch we went to Qudoba... I think I like this place better than Chipotle (sorry!) but they had some delish queso and chips....

and not to mention... this made me smile :)

Saturday night we celebrated K's mom's bday at our fav. mexican resturant... Montey's...
complete with cake and sombrero :) she was very surprised :-D

Sunday we had lunch at my aunt and uncles house because the ac went out at my grandaddys house *and we thought at our house too but apparently it came back on Sunday after being 85 all day Saturday and all night... let me tell you-- that was haaard to sleep!* K had to go back to work Sunday and I watched home videos with my family.

Sunday night was The Bachelorette, "the men tell all" !!

Yesterday, was quite a busy day... had my 30 week dr. apt which was great (I'll do my 30 week update, I promise... I know I missed 29 ... o-well.) Then last night was the Bachelorette finale!  I will admit I was not a huge fan of this season the whole time it was airing but MAN O MAN was the ending worth it!! This was the first time that I have watched that show and actually felt back for who-ever was going to be going home!  Of course ya'll know I was a JP fan all the way from their fist date in their pajamas... just too good together! So i was happy as a lark after he won last night.  (oh and I WILL be watching the Bachelor Pad as it airs next week... I hate Vienna and can't wait to see the drama with her, Jake and Casey! hahaha!)
So there you have it... sorta caught up now right? hah

As I promised... here are some pics from our shoot:

1st Mother's Day ...

better late than never right??

K and I had a GREAT 1st Mother's Day! He took me out for a delicious steak at Texas Land and Cattle! Mmm Mmm Good!! We had a great lunch and then he took me on a "surprise" trip out to the outlet malls.  I had been saying that I needed to do some more "shopping" for maternity clothes and what not so he thought why not!  What he didn't know was that there would be 98798723 different children's clothing stores and zero maternity stores.  We had a blast!

K got his first outfit for the baby girl, and well we got a few more, then a few more :) hehe enjoy the pictures!

After some shopping K took me to my favorite yogurt place: Yogurtland!! Oh my how I love that place! mmmm! We came home and called it a day!

It was the PERFECT 1st Mothers Day!! :)
I just love my baby and my baby daddy!!

the belly again!

K's first purchase for his little girl!
