Overload! BU Homecoming... Jack-O and More!

(an advance "sorry" for the lengthy post... don't worry though, its well worth the read and it's mainly pics.  enjoy!)
Is it just me or does it seem like the more I have to blog about the harder it seems to sit down and do it?  My hubs informed me today that I needed to update my blog because he had no idea what was goin on in my life.  He was kidding of course but that just made me think about all of you and how I owe you a glimpse into my life the past few days.  Very busy, fun days at that!  
So let me back up to friday... that seems like a good place to start.  K worked and when he got off work we ordered a pizza and started something that will not end anytime soon.

I understand that to many of you this may seem trivial or even funny but I understand that you don't understand.  And if you do understand, come over and join us, its the best time ever.  But anyways, this show at first thought, may seem like just another one of your teeny-boper shows, but its not. I promise you that it is pure greatness! And for those of you that really know me... ya'll know that I don't watch TV and I don't watch movies... but this is my exception ha! Check it out for yourself.  Thanks to Lindz and Hil my old roomates who helped me start this massive addiction.  
Anyways, K and I stayed up Friday night until the wee hours of the morning watching the OC and finally we had to crash.
Saturday morning we got up at 5am to drive to WACO, TX for Baylor University's 100th Homecoming!

SIC EM! We unfortunately got stuck in massive amounts of traffic heading south due to an accident that had all 6 lanes of I35 closed. Gross!  Luckily we made it to the parade in just the nick-of-time!  For those of you that don't know, Baylor University has the NATIONS LARGEST collegiate parade. Thats right, largest in the nation!

After the parade we made way to the football game vs Oklahoma State University.  Despite the score we had a wonderful time.  It was so great to run into sooo many people that I had not seen in quite some time including my wonderful roommate from freshman year in South Russell. Such great times!

The game ended and the hubs and I walked around Baylor's Campus for several hours.  I showed him where all of my classes were, my favorite spots, my dorm room, the swings, etc.  As if we hadn't had enough fun already we went to Baylor's Alpha Chi Omega get together in the Panhellenic building.  He got to see our room and where I spent countless hours of my college life.

The day was finally wrapped up with a delicious dinner at none other than Waco's best... Georges Bar! My friend Franzia met us and we had a great time before leaving good ol Baylor U.  


We again headed southbound (yes, this is still Saturday... we had quite a long day...).  We finally arrived at my parents house around 11pm or so and spent a small amount of time catchin up before bed.  It was so nice to get to go home again!  Sunday we went to church and then K and I to lunch together before going back to the church to help with their Pumpkin Patch.  We consolidated pumpkins, bowled rotten ones as well as smashed rotten ones, loaded pallets for a bonfire and much much more. They had the best of Houston's singers and songwriters come out and play music. The weather couldn't have been better and the company couldn't be beat!  (I will have to get mom to email me some of the pictures we took on her camera) 
Monday, the storms came and we decided to sleep in which I of course enjoyed!  Monday afternoon we went and ate indian food and boy was it good! Mom, K and I had fun hanging out there and then went to the grocery to get some items for din-din.  We stayed long enough to help with dinner and to enjoy it with my dad when he got off work and then it was back on the road heading north this time.  
We felt so blessed to get to spend so much time with my parents and for their loving and welcoming arms (and house).  There is just something about being back home that no other thing can satisfy.  K even told me it made him feel like he was closer to home just getting to spend time at mine. Thanks mom and P for all you did to make our trip so enjoyable! oh and for AJ- thanks for giving up your room for the weekend! :) We appreciate it!


Last night was fun. We celebrated Halloween just as I would like... watching "The Great Pumpkin, Charlie Brown," and carving a pumpkin!

Well that was our weekend/week for yah!  And that is just about all that has been goin on.  I will however update you on another creation that I attempted to create this morning.  Boy was it a chore but it was still fun! 
If any of you like Home-made cinnamon rolls this is a good one to try! Although, I will warn you-- this recipe makes about 20 HUGE rolls... waaay more than K and I can handle on our own so some of my sweet friends got a lil early halloween treat! :)  To find the yummy recipe you can check out Blue Cricket Design.  Enjoy the photos! <3

more recipes mmm!

Last night K and I had a wonderful dinner together and I thought I would share with you! If you like Pork Tenderloin then you will love this. And as if things couldnt get better I decided to top the dinner off with a made-from-scratch Peach Cobbler. AMAZING! :)

Pork Tenderloin in Bourbon:

INGREDIENTS
  • 1/4 cup soy sauce
  • 1/4 cup bourbon
  • 2 tablespoons brown sugar
  • 2 cloves garlic, halved
  • 3 pounds pork tenderloin

DIRECTIONS

  1. Mix together soy sauce, bourbon, brown sugar, and garlic. Pour over pork, cover, and refrigerate at least 2 hours, turning occasionally.
  2. Preheat oven to 325 degrees F (165 degrees C). Remove pork from marinade, and place on rack of shallow roasting pan.
  3. Bake for 45 minutes or until meat thermometer registers 160 degrees F/71 degrees C.
I then took the left over marinade and boiled it until it became a thicker consistency and then poured that over the top of the meat. I served the meat with baked beans, and rolls, Yum-Yum Good!

Now for the fun part! ...

Homemade Peach Cobbler!
Now, I dont know about you, but when I hear homemade I think of lots of ingredients and lots of trouble. But, let me assure you this recipe is not anything like that! It was super easy and let me just tell you... it tastes wonderrrrful! I chose to use fresh peaches (and yes, that part was a pain in the butt but well worth it in my opinion ha!) I had to cut 5 peaches and peel them... no fun but my sweet hubby kept coming in the kitchen and taking pictures telling me I needed them "for your blog" :) he is so sweet!

Okay so are you ready for this!? once again this amazing recipe comes from SouthernPlate.com and to them I give ALL credit!

Peach Cobbler

4 cups peeled and sliced peaches
2 T. lemon juice
1/2 cup sugar
1/2 t. cinnamon
1 cup milk
1 cup s/r flour
1 cup sugar
1 stick butter or margarine

Preheat oven to 350 degrees. Melt stick of butter in oven proo f casserole dish in oven while making pie ingredients.

Pour the two T. lemon juice over the peaches. Stir to coat. Pour 1/2 cup sugar over peaches. Stir. Heat in microwave for 1 minute so that sugar begins to melt.

Mix together 1 cup flour, 1 cup sugar, and cinnamon until blended. Pour in 1 cup milk and mix until blended.

After butter is melted, take casserole out of oven and pour batter on top of melted butter. Pour peaches on top of batter. DO NOT STIR! Sprinkle a tablespoon of sugar over pie. Place in 350 oven and cook for 55 minutes or until golden.

If you don’t have fresh peaches or just want an easier way to do this, substitute the following for the fresh peaches:

Easy Day Cobbler
1 29 0z. can sliced peaches in syrup
1 T. lemon juice
This can be substituted for fresh peaches. You will not need to add the 1/2 cup sugar to peaches.

Creative Itch

Lets see here... I guess somewhere along Friday afternoon some bone in my body got a huge creative itch and I just went with it. Karl had to work on Friday so that left me with plenty of time to play! I made this yummy Halloween dessert, Candy Corn Bark:

Here is something else creative that I decided to try this weekend. Some YUMMY Grilled Chicken (without the grill) . If you like to marinate your chicken in an Italian dressing this is a MUST for you to try! It was seriously sooo easy! Just make sure that you take it off the heat, just in time before the meat gets too tough (and have at least an hour to marinate). This was a big hit for both of us!

I found the recipe on www.southernplate.com . They have all kinds of yummy recipes as well as other fun things on their site. The grilled chicken (without the Grill!) recipe is here.


In the recipe for the chicken was a link for a Bananarita *it is a non-alcoholic drink more like a smoothie*... I decided to make these for K and I for breakfast ... they were yummy and for the most part... semi-healthy with a total of 4 banana's. I added a few strawberries also just for fun and because I can never get enough strawberries :) Here is the link to Bananaritas .

Sunday was a good day also, the hubby was off work and the weather was beautiful! I think it was about 68 degrees with a nice breeze and no clouds anywhere to be seen. We layed out and K even got a little sunburnt. We finished off the weekend with a trip to The Village where we saw lots of friends and went to Chili's with two friends who I havent hung out with in forever, Bryan and Leslie. We had a great time talking and just hangin out.

I forgot to mention that Friday night we went out with a couple of our friends after K got off work. We enjoyed getting out and we bother really enjoy Emerald and Justin who are engaged and soon to married also, YAY!

I Wanna Be Like YOOOOU!!!

Well that is the perfect start to this post. Trust me... this was the highlight of my night, my week and most likely our marriage this far (okay that might be a stretch but still it was great, you get the idea.)
K was off work today, YIPPEE! and we spent it doing a lot and a lot of nothing. We slept in - wonderful- and then started our day. We mailed a package to Karls grandma with a bottle of wine in it. The mail guy made sure we were not sending cologne because apparently that is not allowed... interesting... of course we asked why. dumb reasons but apparently it is flammable and the airplanes do not allow it. (this bothers me... why am I allowed to travel with it but my package can not?... just wondering...) Learned something new today anyways... cool. ha!
Okay, welcome to the great state of Texas where the weather was 64 degrees and sunnnny and breezy... pure BLISS! we had the time so we drove. just straight up drove and drove... ... ... and ... ... ... drove. Loved it! Windows down sun up breeze in the hair... thank you Jesus, it was wonderful.
We decided that we needed to fuel our engines (not the car, our tummies) so we stopped at Pei Wei and I enjoyed a nice Spicy Chicken Salad- go try it. Perfect combo of sweet and spicy! We then made a trip to Barnes and Noble where we purchased a few books -- one called "Letters from a Skeptic" by Dr. Gregory Boyd and Edward Boyd, and "The One Year's Devotions for Couples" by David and Teresa Ferguson. I will keep you update on these new reads as we go. I skimmed todays devo and so far it looks like a great devotional for those of you out there who are married and looking for something to strengthen the spiritual side of your marriage. I'm real excited about this- it is something that I have wanted us to do for some time now... can't wait to start that tonight in a few mins.
My parents go to a church in Sugar Land, TX named Holy Cross Episcopal Church. This is a wonderful God-fearing, God-serving church. Father Scott has been doing a series on Marriage that he started last weekend when we were in town. Convenient. :) So since we aren't able to travel such a great distance every weekend (even though we would love to...) we podcasted the sermon online -- you can check it out to by clicking on the link here. Today was entitled "Marriage: Real Love" -- it comes HIGHLY RECOMMENDED ... by me! You can download it to your ipod and even listen to it on your way to work or on your daily run. It isn't long and it is definitely rewarding.
By the time the sermon was over my tummy was definitely rumbling for some food. K cooked for me and ordered from Papa John's pizza ha! One of the best meals ever haha!
The other night K and I purchased a couple of movies from Wally World... classics... tonight he picked the WONDERFUL Jungle Book. The movie was good, as usual, the company was great, as you should come to expect, and ... well... the music during the menu was THE BEST hahah! We danced around the middle of the living room singing and having a grand ol time. GRRRAND!!!! We have sooo much fun together, even if we do act like we are 10 years old. I hope we still do things like this when we are 100! and honestly, I have no doubts in my mind that that will be a reality. (Even if we are in our wheelchairs! ha!)

Whooo will it be!?

MMM the smell of fall is in the air... literally ha! I have the pumpkin spice candles burning and the decor has been up for some time now... I have pictures that I will post later tonight. I have a glass of sweet red wine in hand and my hubby on my right side! Leftover dinner is warming and Dancing with the Stars is on. Not that I care about that show... BUT... tonight at the end of the show ABC TV network will be announcing who the Bachelor will be!!! I am trilled to death and hope so bad that it is Jake Pavelka!!!!! The show airs in January so until then they are just teasing us... :)
Updates to come later.... oooo keep your fingers crossed!

This is a perfect end to my already good day. A productive day at that... for once! Picked up the house, did laundry and put about 100 pounds of laundry away, as well as picked up the bathroom and slightly cleaned it- which was much needed!! Oh and to top everrrything else off... the hubby came home early tonight!!! Such a treat! Thank you Jesus for that blessing!

Friday: Date night! Wahoo! Had a nice dinner then relaxed, watched a movie and called it a night.

Saturday: Spent 5 hours (yes, FIVE) on our first draft for wedding invites.
Outcome was good though, we have a starting point now! Wahoo!

Sunday: Did a lot of relaxing and Church


Tonight was good as well... K worked and for dinner I made meat-loaf, mashed potatoes and corn.

JINXED!


I guess I jinxed myself yesterday because this afternoon (through midnight tonight) we are under a tornado watch. Wahoo. And check out this picture earlier this afternoon:


does this look like tornado weather to you? yah, me neither. So anyways... we are just now starting to get some of that rain the forecasters told us about way earlier today!

On to a more fun note, today, I found out about this awesome website that does a "Deal of the Day" and has some really cute things-- you should check it out!!

Also, I want to share with you a song that I heard today (and I am pretty sure that we have sang at church before) that I absolutely LOVE- the lyrics speak the Gospel and the praises ring to the Almighty through this song. Pleeease listen to it and BE BLESSED! It is called Glory To God Forever by Fee. I'm listening now and I just get sooo excited! Try it ;)


One more thing before I go for the night (hub's is sitting here waiting for me to finish and I'm attempting to eat a piece of delicious yellow cake with rainbow chips- my fav- while finishing todays blog entry) - I have an interview tomorrow at 1pm CST. TORNADOS & GIVEAWAYS!

58 degrees at noon today. I can't complain! The weather has once again been very dreary but I am still enjoying all the mist and rain and last night a BEAUTIFUL lightening storm! This afternoon it was clear and so nice outside that I had the windows open when all of a sudden I heard the tornado sirens going off. Luckily after checking weather.com I realized that there was no tornado but I guess they were just "testing" the sirens. Okay, lets be honest here... who is in charge of these sirens anyways, and who is in charge of their testing schedule?? One would think that when we have been having storms for the past few weeks, bad storms, that this would not be a good time to "test" our tornado sirens. Grr. Sorry, I just had to sound off about that!

Weekend Travels + the joys of COUPONS!

This weekend was wonderful and a much needed vacay. K & I headed down to Houston to spend some time with my parents. Due to some last minute conflicts with K's work we were unable to make it to a highly anticipated wedding that I was more than excited about. It just happened to be a couple that I introduced waaay back when... about hmm 6 years ago I think. I was one of the Baylor Hockey players "Honey Bears" in college and the groom was one of the players. The bride was in my pledge class for Alpha Chi way back in the day. I am sure that their wedding was nothing less than wonderful and I can not wait to see pictures.
This weekend we took a day trip to Galveston and saw some of the damage from IKE. We took a ferry from Galveston to Bolivar Island. We drove around the island, walked out on a jetty, and caught a couple hermit crabs (we let them go). We returned to Galveston, then ate a wonderful meal at Gaido's (sooo delicious!) Unfortunately most of the day was raining but we managed to still get out some and walk on the beach and such but as we were leaving to head back home the bottom fell out. Luckily we made it home safe and sound through all the mess with a wonderful chauffeur, my stepdad! Here's a few pictures of what it looks like more than a year after the hurricane...

Sunday we went to church where I went all through middle and high school, Holy Cross Episcopal and received a very good message from Father Scott about Marriage! Very convient I thought :) His sermon can be found "here". We had lunch at Double Daves pizza and then made a long trek back to our house... we brought one of my kitties Yoda back with us, but my other kitty Ariel was not going to let me take her away from my parents house, so we ended up leaving her. She would hiss and bat at me anytime I got near her. She definitely knew something was up. Yoda, on the other hand, happily crawled in the cage once it was by the door and was ready to go. He only cried a short distance and then napped the rest of the trip home. We stopped at Freebirds and ate din-din and finally made it home around 11:30pm.
Yesterday was back to work for K but luckily this week he finally has better hours (thanks so much for your prayers- Glory to God!!) We have really enjoyed getting to spend more time together, and I really have enjoyed making dinner for us and having a more "normal" marriage!
Today I thought it would be fun to cut coupons from the Sunday paper in attempt to "save $$"and that we did. Tonight we went shopping for groceries and had a blast while doing it... we ended up spending about $120.00 but saving almost $40.00!! Exciting, but I still spent a lot of money ha! I was so excited about scanning all of the coupons (I am a nerd... I know) so we went to the self check out lane with our hundreds of items. When we were finally done scanning all of the groceries I was super pumped to scan the coupons-- I press the "coupon" button and it tells me to "please hand the coupons to the attendant"... I was so disappointed, all that work and I didn't even get to scan my own coupons ha! Oh well... thats life I guess ha!
