Happy Birthday with Rolo Cookies!!

Tonight my dear cousin, Mari,  and I had to make a little birthday surprise for my sweet step-mom who's birthday was today!! Happy Birthday, Lady!! I LOVE YOU sooo much and you are such a blessing to me EVERYday!! :)

You see, my step-mom is crazy in love with the chocolate candies, Rolos (not to be confused with Rolaids - cough- grandaddy! haha He couldnt figure out why we made cookies with "Rolaids" in them hahahahah!) ... anyways. Like I was saying, she loooves the chocolates to say the least. So, being the good daughter that I am, I looked up recipes on the trusty Pinterest.com for anything with Rolo's... up came some delicious looking images to which I easily followed the link...

here is what we went with...

Pinterest sent me to Six Sisters Stuff to learn how to bake these cookies and not only were they sooo tasty but they are also beautiful.  Needless to say, we all (including the stepmom) loved them!!! :)

The recipe couldn't be any easier

you need:
1 box of Devils food cake mix
2 eggs
1/3 cup of oil
1 bag of Rolo's
(optional: Powered sugar)

mix well
then use just enough of the batter to cover the Rolo (so it can melt when baked)
bake at 350 for 7-8 minutes on a greased cookie sheet
sprinkle with powdered sugar if your heart desires... (ours made exactly 3 dozen!)

Easy as pie right? Well I think it was EASIER than pie because ... well yea.

Here are pics from the "little" surprise bday party we had for "Foxy" (what I call the stepmom... long story ha!)

She was both thoroughly surprised and loved it (I think :) )
The Bday girl :)

her balloon :)
The delish cookies and her "present"

She is realizing what she got....

surprise surprise! haha :)
Hope you all have a GREAT weekend!! This is the last week/ weekend that I have this summer withOUT my man and I couldn't be happier! We are going up to camp tomorrow for their end of year banquet... :) Check back with you next week! Have a wonderful weekend!! :)
